Kulfi is a popular Indian dessert. It is delicious, cold, sweet and melts slowly. There are so many varieties of kulfi to try, from kesar kulfi to mango kulfi.
Mostly, it is served in ‘matka’ or ‘kulhad’. But it is also available in ice candy form on the stick. This cold treat is not only delicious, but also refreshes the mood with its thick, creamy texture. It can be easily prepared at home. Kulfi is often served as dessert at home parties.
Some variations such as stuffed mango kulfi or falooda kulfi are also very popular.
My grandfather used to make it for me and my cousins when we were little. He used to let us drink the kulfi mix, and it tasted just like a kulfi milkshake. Also, he loved putting lots of dry fruits in it.
Hmmmm…. Those days!!!

How to make Kulfi without condensed milk at Home?

Ingredients
2 cup milk
2 tablespoon mawa
2 tablespoon sugar
1 tablespoon cornstarch
1 teaspoon cardamom powder
One pinch saffron
10 pistachios
10 almonds
Directions
- In a pan, heat the milk at low flame for at least 15 minutes with continuous stirring.
- Mix cornstarch in 4 tablespoons of milk and keep it aside.
- Crush pistachios and almonds with mortar-pestle. Keep them in a bowl.
- Add sugar to the milk and let it dissolve.
- Then, add cornstarch, mawa, pistachios and almonds to the milk.
- Let the milk simmer for 4 minutes. The milk will thicken.
- Switch off the stove and add crushed saffron to the mixture.
- Let the mixture cool down before you pour it into kulfi mold.
Hopefully, you will enjoy it as much as me and my friends do. You can serve it in ‘kulhad’ or in a normal crockery. Don’t forget to garnish kulfi with chopped pistachios and almonds.
